Olive Oil Fried Eggs

I’ve been eating fried eggs for breakfast pretty much every day since freshman year of high school. As exciting as that may sound, I get bored if I eat the same 2 scrambled eggs every day, 7 days a week. However, finding exciting (and simple) dairy free breakfast ideas can be difficult. Recently, I couldn’t find any Pam cooking spray for my pan, so I used a little olive oil instead. And by a little, I mean I dumped a significant amount of oil into the pan. It resulted in a delicious new breakfast option! Pair with fresh tomato and basil.

  • 2 eggs
  • 3 tbsp olive oil
  • Handful fresh basil leaves
  • Salt & Pepper to taste
  1. Turn on your stovetop and pour the oil into a frying pan. Be careful - it jumps. I would recommend wearing an oven mitt.
  2. Crack the eggs on the slide of the pan, allowing them to slide into the hot oil.
  3. Turn off the stove immediately. The oil will cook the eggs extremely quickly. Remove from heat altogether once the edges are golden.
  4. Sprinkle some fresh basil, sea salt, pepper, and tomato, if you'd like.
