Frankenstein Avocado Pasta – Dairy Free

Looking for a dairy free dinner idea that isn’t bland or a salad? I gotchu! I love avocado and I’m always looking to add some sort of vegetable to my meals. This is a perfect dinner recipe for one, two, or a group, and made for a funny Halloween dish. I served mine with a side of ciabatta bread. Avocado pasta has become my go-to dinner, both for summer and winter!

You can adjust the ingredients below based on how many guests you plan to serve. I try to stick to one cup of pasta if I’m eating alone, and therefore would make significantly less sauce. However, this meal is so healthy, it doesn’t really matter! If you’re looking to make it dairy free and gluten free, just sub out the pasta. For a dairy free and ~healthier~ version, try whole wheat pasta.

  • Fill a large pot of water and bring to a boil. Cook the pasta al dente. (Al dente means "to the tooth" in Italian if you care. Shout out to 7th grade Home Economics.)
  • Scoop the avocado and squeeze the lemon juice into a blender or food processor. Chop up the avocados to make it a little easier if you're using a blender (like me).
  • Add the olive oil, garlic, and salt to the blender and mix all together. Stir the sauce into the pasta and garnish with fresh basil.
