Winter-y Fruity Salad

This past weekend my friends and I threw a brunch bash and feasted on a handful of my favorite dairy free breakfast recipes. The side dish that stole the show, though, was this winter fruit salad. It’s hard to find my favorite fruits in the dead of winter in Virginia and I very much dislike cantaloupe and it’s typical watery fruit salad variations. This recipe was perfect for a snow day brunch! Original recipe inspiration found here. I tweaked a few things to fit my preferences.

INGREDIENTS: (Adjust amounts to your preference)

  • 1 pineapple, cubed
  • 3-4 kiwis, peeled and cut into quarters
  • 3 clementines
  • 1 cup pomegranate seeds
  • A huge spoonful of honey
  • Half a squeezed lemon
  • Fresh mint leaves
  • A few shakes of poppy seeds (optional but super yummy)

STEPS:

  1. This is a very simple recipe. Mix all of the fruit together.
  2. Drizzle honey, squeeze lemon, and shake poppy seeds on top. Through a few mint leaves in and give the whole mixture a good tossing.
  3. Ta-daaaaaa!
