“The best pancake topping is more pancakes.”
I can’t take the credit for this recipe – my lovely friend Emma sent me this pancake recipe a few weeks ago. It is so easy and delicious that I had to share.
- 1 ripe banana, peeled
- 1/2 cup rolled oats
- 3 1/2 Tbsp almond milk (unsweetened is my fav)
- Optional, but she suggested adding walnuts and blueberries and topping the pancakes with strawberry jam and honey. Do whatever you want!
- Just mix the ingredients together and heat a skillet on medium heat. Cook as you would normal pancakes!
- Add toppings/garnish if you’re feeling fancy, and you’re good to go!
